Piña Buttermilk Pancakes

I'm recently inspired by this bright and colorful artist on Etsy. Bold, adventurous colors of every imaginable beach item...probably hard to tell she is from Florida.

In honor of my new favorite artist, I made pineapple / coconut pancakes (much earlier) today. The boys will eat them even without syrup.

You'll notice buttermilk is not on the recipe, but fake buttermilk is. See my substitution below to make them light and fluffy:


1/2 cup white vinegar
1 cup milk
( mix and let sit 5 minutes - acts as the buttermilk substitute )

Mix in a large bowl:
2 cups white flour
3/4 cups oatmeal flour (or white flour sub)
2 eggs
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1/2 milk OR pineapple juice or any juice
* Optional: 1/2 cup of coconut cream

Add milk / vinegar mixture and mix by hand until only few lumps remain. Best if you are lazy and do not over mix - good to have some lumps.

Add extra milk or juice if you prefer thinner pancakes.

I use a regular metal pan with a light coating of oil to cook the pancakes or just a non-stick pan works well. You don't need much oil, just a very light coating.

If you really want to get crazy, add some fresh or canned pineapple on top with the syrup or just eat them plain for a quick to-go snack.
